Cheese soup and comfort food

Easy, quick and leaves you wanting more…………….cheese soup.

Mr. FD is a wonderful cook and most generous with his recipes when asked.

His recipe for Cheese Soup is a fan favorite.

 

We recently were dinner guests at the home of close friends.

 

Not only were we served Cheese Soup (recipe compliments of Mr. FD),

but so much comfort food we were all ready for naps when the meal was over.

 

First there was the Cheese Soup…  recipe will follow

Now to the real comfort food

Served with warm bread and wine. I have such wonderful friends, don’t I?

The dessert was … “make your own Sundae.”

Vanilla ice cream and all the toppings you could ask for. She spoiled us with warm chocolate

syrup, dark and milk chocolate.

I am ashamed to admit, my sundae was devoured before I even thought about taking a picture.

I’m sure you can get the visual…. 2 scoops of ice cream, nuts, milk chocolate syrup and whipping cream

on top and served in a clear glass dish……something like this.

No breakfast for me the next day,……… even if I were a breakfast person.

 

Ok …. the Cheese Soup recipe according to Mr. FD.

 

 

start to finish 30 minutes…… makes 5 cups

1 cup water

1/2 cup chopped carrot

3 cups milk

1/4 cup all purpose flour

1/2 tsp instant chicken bouillon granules

1/4 tsp black pepper

1 & 1/2 cups shredded sharp cheddar cheese (6) ounces

1 & 1/2 cups shredded American cheese (6 ounces)

 

*In a large sauce pan bring water to boiling: add carrots.

Cook covered about 5 minutes or until tender. Do not drain

 

*In a small bowl gradually stir about 1 cup of the milk into the flour. Then stir mixture

into cooked carrots in saucepan. Add the remaining milk, the bouillon granules and pepper.

 

*Cook and stir over medium heat until thicken and bubbly. Cook and stir for 1 minute more.

Add cheddar cheese and American cheese, stirring until melted.

 

 

A simple recipe with rich flavor.

Serve to guests at a small dinner party and expect not only compliments, but requests for the recipe.

Mr. FD doesn’t mind at all.
