Life can get crazy for all of us. Slowing down to get together with friends
takes determination and planning around the “must do’s” of life.
I find one of my “must do’s” has become making time for friends.
Friend time brings me much joy and positive energy.
Then you factor in the good food we always share,
it gets better and better.
We recently had received an invitation to share ”Mexican Night” with good friends we had not seen all year,
due to sickness, weather and just plain “we can’t get our schedules to cooperate.”
We accepted their invitation enthusiastically. The hostess has her own recipe for guacamole and
never fails to wow our taste buds.
Our night started out with mango margaritas prepared by the host.
The question of the night….. Will he want a paper napkin or a cloth napkin?
Of course we knew the answer…….. the cloth napkin every time.
He is a bit of a snob when it comes to his napkin.
Believe it or not……… we actually saved room for dessert.
Our host found this recipe on a cool whip container and according to him…….easy to prepare.
We came up with a lot of variations for this recipe such as using different candy and substituting graham crackers
in place of the Chocolate Cookie Pie Crust.
But hey……….the original recipe can stand on it’s own as being one of the better desserts that doesn’t require a lot of
prep time and is very tasty.

And a wonderful gift basket was given to the December Birthday guy by the host and hostess.
He is soooooooooooooooo spoiled.
We ended the evening with promises to do this again soon and not allow so much time to go by before
we get together.
